PISTACHIO, CRANBERRY & LIME BLISS BALLS

Ingredients

  • 1/2 cup cashew butter

  • 1/2 cup rolled oats

  • 1/4 cup desiccated coconut

  • 1/2 tsp vanilla essence

  • Rind and juice of 1/2 lime

  • 1 tbsp rice malt syrup

  • 1/4 cup cranberries

  • 1/4 cup pistachio kernels

Method

  1. In a food processor, blend together the cashew butter, rolled oats, desiccated coconut, lime rind and juice, vanilla essence, and rice malt syrup until thick and creamy.

  2. Add the cranberries and pistachio kernels and blend until roughly chopped.

  3. Roll into 8 individual balls and store in the fridge.
