FIG & WALNUT MUFFINS

Serves: 12

Per serve: 1474kJ | 6g protein | 22g fat | 36g carbs | 3g fibre

Ingredients

  • 1 1/2 cup self-raising flour

  • 1/2 cup plain flour

  • 1/2 cup brown sugar

  • 1 cup walnuts

  • 1 tsp ground cinnamon

  • 1 egg

  • 3/4 cup milk

  • 3/4 cup canola oil

  • 1 tsp vanilla essence

  • 1 cup figs, diced

Method

  1. Preheat oven to 200 degrees Celsius. Lightly grease a 12 cup muffin tray.

  2. In a bowl dry whisk together all of the dry ingredients.

  3. In a separate bowl whisk together all of the wet ingredients.

  4. Make a well in the center of the flour mixture and pour in the wet ingredients, including the diced figs. Gently fold together until just combined.

  5. Divide the mixture evenly among the 12 muffin cups.

  6. Bake for 20-25 minutes, or until golden brown and cooked through.

  7. Remove from oven and cool completely on a wire rack.
